Spiced Blackeyed Bean Burgers.

1 finely chopped onion

juice of half a lemon

1 tin mashed blackeyed beans

4 oz breadcrumbs

handfull of chopped fresh coriander

chilli flakes to taste, 1tsp paprika,1tsp cumin

Fry onion until soft and season well.Add chilli,paprika and cumin,add lemon and tomato puree or soya sauce to taste.Add to beans and breadcrumbs and mix well. Shape into burgers.Roll in flour and shallow fry.

Buckwheat and Lentil Slice.

1 finely chopped onion.

6oz roasted buckwheat

6oz red lentils

1 stockcube

1tsp marmite

Fry onion in a little sunflower oil until soft, season and add remaining ingredients. Add water to cover...not too much you can always add more later...bring to boil then simmer adding more liquid if needed.Simmer until soft then pour iunto baking tray and bake for half an hour in a hot oven. Great with all the trimmings for a tasty and healthy Sunday lunch.
